I could stick with my current OS version on the Mac Mini and keep it off the internet. But I think I'm better served in the long term flashing Linux, which apparently is now straightforward with the T2 chips if you turn off a security setting.

I figure that 64GB RAM will be just as performant with a Linux real time kernel.
