Any advice on how to cook hash browns like fastfood restaurants?
ok so today is my 3 year weeding aniversary and I want to try a surprise for my wife. We cant get hash browns in spain.
Im gona try this recipe, but idk if its good or if you have any advice

This recipe makes me kind of nervous about AI because they don't mention what kind of potatoes, which is unusual. Almost any potato recipe will specify because their properties are different. What kind are you planning to use?

wolfwalks has a lot of good info here - im gonna second drying those potatoes to heck because its so easy for them to turn out mushy.
BUT the other thing im gonna recommend, is frying the hash browns in BEEF TALLOW rather than vegetable oil, if you are able to find it. it kicks potatoes from a 9/10 to a 10/10 for me and iirc it's what mcdonalds used to cook their fries before they changed their recipe years ago.

Absolutely annihilating the water is essential. Less water = more crispy. You're probably not going to be able to reach McDonalds level dessication because they have industrial equipment and chemicals but you can do your best, just absolutely squeeze the devil out of it and pat dry until nothing comes out.
